My sentiments exactly, just the thought of that has me drooling.  Nice pick up!

Now that it's looking like I'll be living in the same house for the next 13-18 months I may have to give curing my own ham a shot.  I've cured duck breast, lardo, and a few other small things before but nothing requiring that kind of time commitment.  Off to the planning stages...

Anyone know how to easily make "steamed bao buns" at home? Not sure if thats what they're called.

Thanks for that. I've actually had Momofoku's steamed buns and it's what got me hooked. Then I tried Bao Haus a few blocks away and Banh Mi Boyz in Toronto(which are my favorite). Such an amazing dish. I might actually go to the new Momofoku in Toronto tomorrow night if we can get in.

Based on how good these came out I'll definitely have try and swing by Momofuku while I'm in NY if I can.  These may easily become my go to food after a long night of drinking.  Once the buns and porkbelly (or whatever else I happen to fill em with) are made it's just a simple matter of reheating left overs, assembling, and then BAM!  we have a happy Mike...
