Giles What mix/method did you use for your bread starter?

I am currently not using the starter I am using shop-bought yeast granules. The starter is currently in the fridge, I think it's ready now. I'll take it out of the fridge sometime early to mid next week and try a Poolish, Biga or Sourdough, not decided yet.
I used this method, but used water initially not pineapple juice….
I'm not 100% sure I am happy with the result, so I may revert to the Ken Forkish method. I am using his recipes for my bread, so it makes sense....

Put the sauce on top of the cheese. And use less sauce than you think you need. That will be just enough. Set oven to as hot as it goes. Cook the pizza fast. Not sure if this advice is welcome but I hope it helps

I urge you to buy this:
Supplement it with watching his YouTube vids to see him using some of the techniques.
Follow his advice to the letter and you will not fail…..
